Ingredients

  • #1 Tonkotsu Ramen Soup Base (1.5 floz)
  • hot water or soup stock (12 floz)
  • ramen noodle (thin, straight noodle is more common)
  • chashu pork
  • green onion
  • wood ear mushroom
  • ajitama marinade egg

Instructions

  1. Boil noodles w/ plenty of hot water.
  2. Mix 1.5 fl.oz soup base w/ 12 fl.oz soup stock or hot water
  3. Transfer noodles into a bowl & add seasoning oil
  4. Add toppings to complete your dish.

Tips

  • Straight, low-hydration noodles are used because they hold up to rich broth and stay firm.
  • Toppings are simple like chashu, egg, and green onion because the broth is already strong.
  • The bowl is minimal to highlight the creamy broth and toppings.
  • It is served quickly to keep noodle texture and aroma.
